Watch, Want, Where.

Happy Halloween!!! Today is the first in a series I would like to do on Wednesdays. Today as a whole is going to be pretty exciting and very busy. I have friends in town, which means that I will be going out to some type of club; just because this is Las Vegas and when people come to Las Vegas they want to do "Vegas things". I wish people would come to here and say "Let's take a road trip, let's see what's outside of this place." That way I get to see something new, ya know? Meh I'm rambling.. anyway onwards.


Watch : Crystal Castles - Plague. When I first seen this video I almost started watching with my hands covering my eyes. But I managed. I feel like it's a perfect Halloweenie type of music video that isn't the typical " halloween video". You know dark lighting, dark room, someone running because someone is trying to kill them.. or some type of being - vampire..werewolf. Or the types that are really sad and depressing.



Want : Do you see those shoes? no really.. DO YOU SEE THOSE SHOES? I was in Urban Outfitters looking for clothes for my halloween costume (I didn't find anything I might add..except a skirt or two), happened to walk past and saw these babies at a glance. Didn't even pay attention. Until later in the day when I was at work I came up with this idea of an outfit that included these badass shoes. So you may be sitting there wondering why do I still want these shoes.. why didn't I go back and buy them?? Because they are 255 dollars that's why. A girl has to pay her rent.



Where : I happend to be browsing blogs last night and came across Chestnut Mocha, the first post I saw was on Katie and Ben's incredible corn maze adventure. And it got me thinking about how I haven't done anything fall-like this season. I haven't gone to a pumpkin patch, haven't carved any pumpkins..haven't even had a pumpkin spice latte from Starbucks, haven't made super corny dishes (see what i did there? eh, ehh? haha)..there is a lot I haven't done this season and I'm kind of disappointed now. The thing that sucks about living in the desert is you don't really get cool things -  like corn mazes around you. The closest one to us is about an hour away and today is its last day. I kind of wish that I looked into it sooner then R. and I could've had a day trip adventure..but we googled it last night at like 10 pm *we are such procrastinators*. Hopefully I will at least get to go to a pumpkin patch at some point...hopefully.

Tasty Tuesdays

Yesterday I spent a few hours going through my vegetarian cookbooks to find R. and I some meals for the upcoming weeks. To admit I've had these cookbooks for about a year and a half and haven't cooked not one thing from them. I've also never had butternut squash before and was VERY pleasantly surprised. Now to the details - I didn't have some of the exact ingredients so I substituted.


You Will Need:
~ 4 Teaspoons of Olive Oil
~ 1 Butternut Squash, peeled and cut
~ 3 Medium Carrots, peeled and cut
~ 1 Large Onion, chopped * I used about half of a large red onion
~ 2 Tablespoons of Chili Powder
~ 2 Garlic Cloves, crushed with garlic press
~ 1 Can of Plum Tomatoes * 1 Large Tomato, sliced and diced
~ 3 Jalapeno Chiles, seeded and minced * 1 Jar of Jalapeno Chiles (the kind you use for nachos)
~ 1 Cup of Vegetable Broth
~ 1 Tablespoon of Sugar
~ 1/2 Teaspoon of Salt
~ 2 Cans of Black Soybeans, rinsed and drained
~ 1 Cup of lightly packed fresh Cilantro
~ Plain Nonfat Yogurt (optional)


Start by microwaving the squash for 2 minutes to soften it. Cut the squash into pieces, place it in a bowl. Then do that same with the carrots and onions, putting those into another bowl. Grab a deep skillet and heat 2 teaspoons of Olive Oil on med-high heat until its hot. Add squash then cook until it's golden. Should take about 8 to 10 minutes. Once done place the squash back into the bowl. Add 2 more teaspoons of olive oil into the pan, with the carrots and onions, chili powder and garlic. Stir occasionally - until golden. It should take about 10 minutes.

(If you are using a can of plum tomatoes then skip this step, otherwise you will want to cut your tomatoes up now. )

Move everything into a saucepan, otherwise it could almost overflow like ours did.. *whoops*. First move the carrots and onions over; add the tomatoes, jalapenos, broth, sugar, salt, squash, and soybeans. Heat to a boiling on medium high heat, then reduce the heat to low, cover and let simmer for about 30 minutes..or until squash is tender.










You can then add the cilantro. Or make rice to serve with the chili, like we did. This was both our first times eating squash and it turned out really good. R. said "it's like they're potatoes". This recipe makes about 10 cups or 6 main dish servings. But I think since we paired it with the rice it'll last us for about the rest of the week.

Leaving the Nest

About two weeks ago I moved out of my mothers house into an apartment with my boyfriend. It still feels so different to not be able to come home to her and just give her a hug before going into my room for the night. But I do have to admit that although I miss having her in the same house, I do like having my own space. Looking around I see so many design ideas pop into my head. And I can not wait to start decorating the apartment with them.
